Serve up this dip on St. Patrick’s Day — it’ll be the pot of gold at the end of the rainbow your party guests never knew they were looking for!

Serves 10-12


5 Hass avocados, diced (cubed)
3 Anjou pear, cored and finely diced
3 garlic cloves, finely chopped
¾ cup chopped roasted pistachios
½ cup fresh coriander (cilantro), chopped
½ cup purple onion, finely diced
1 large jalapeño, finely chopped
2 tbsp. fresh lime-juice
2 tbsp. Mexican chili pepper seasoning (Tajin)
2 tsp. ground black pepper
2 bags of your favorite Dippin’ Chips flavor (Recipe used Blue Corn)


1. In a large mixing bowl combine the avocado, pears, jalapeño, lime-juice, coriander, garlic, pepper and chili pepper seasoning.

2. Add pistachios and mix well.

3. Serve with your favorite Dippin’ Chips flavor. Enjoy!
